I can tell you it is incredibly easy (and delicious). What can I do to prevent spoilage when I use the pressure canner? Bring to a boil over high and cook until reduced by 1/3 (about 5 minutes). Maybe when the weather gets cold and everyone is inside? But nothing compares to a freezer and some fridge space. I think it's fantastic that regional recipes have been preserved this way, and it's also good to see an alternative to freezing/canning that preserves more of the vitamin content.

Initially,I was mainly interested in the (lactic acid) fermentation section, but after reading through some of the preservation recipes for vinegar,salt,sugar and drying,that have been included,I decided I needed to add the title to my personal collection. Also good rubbed under chicken skin before roasting and stirred into beef, lamb, or pork stew before the end of cooking.
