My friend and a contributing writer to the Fairfield Green Food Guide, Elizabeth Keyser, recommended Christine Ferber’s Mes Confitures when I asked about excellent jam, jelly and preserve cookbooks. Foods that would be delicate after cooking, such as peaches, are generally raw packed. If they were processed correctly and remained sealed, they may have been safe... but that's just gross. I like the one that Penzeys Spices makes. It includes recipes and directions for fruit butters as well as cooked, pectin, & refrigerator jams, jellies and preserves.

The temptation to package holiday canned foods in special decorative jars is not recommended. But y'all are having another heat wave so it's hard to know when that will happen.)
